Tasting Notes by Jim McEwan
Color - Bright amber honey
Aromas and Flavors - This is a South Islay classic. Lots of peat smoke, blooming heather, Atlantic openings, hot sand, strong spirits and long finishes. We find this phenolic DNA throughout the tasting and it goes perfectly with the crunchy sweetness of the barley.
At this age, he is at his peak.
The sweet, oaky, spicy DNA of its bourbon fills gives a spicy halo to the alcohol, and it works beautifully with phenolic smoke.
But it's not just the smoke and the oak, the crisp sweetness of the barley sugars brings balance and contrast of flavors to the palate.
The finish is long and intense, clearly from the character of Islay, make no mistake about it!
Throughout the process, you will detect slight fruity overtures as well as floral notes due to the yeasts used during the distillation fermentation.
