Tasting Notes by Jim McEwan

Color - Summer barley fields

Aromas and Taste - It explodes on a combination of smoke, seaweed and allspice, followed by the sweetness of charred oak sugars and spicy residue from the bourbon that filled the barrel. It's a unique olfactory experience, with a lot going on, the oak holding in the great aromas and allowing the quality of the distillate to shine through, which also highlights the skills of the team working quietly without a computer. They are seldom mentioned, as this is not the Islay way of doing things, let the consumer judge their skills. This is a slow distilled and 100% matured craft spirit in Islay.

Octomore is the gentle giant of a spirit. Its smoky character does not hide the art of distillation, it highlights it.

The finish is unique and truly wonderful. The flavors linger long and warm you, bringing you back to Islay for a spiritual journey.
